In our CSA share this week (last winter/spring pickup!)

In the pickup for our SE Portland and Lake Oswego/Luscher Farm shareholders this week:

This week we have more Baby Cauliflower – so delicious!! The very small head is wrapped in many tasty leaves. Make sure and use the leaves and stem as well as the head. Or cut the whole thing in half and grill or roast it.

Hope you have been enjoying all the Amish Butter Popcorn. We took the corn off the cob for you this week, but it still the same flavorful variety. Most folks already know how to cook popcorn, but I’ll share my favorite recipe anyway. This can also be ground into a wonderful polenta.

If you want to geek out on Raab, Rapini, Broccolini and learn the difference between all the different kinds of Cimi di Rapa then definitely check out this YouTube video from the Culinary Breeding Network. In your share you’ll enjoy the elongated stems and flower buds of kale & collards aka Brassica oleracea

Double the fun with two different kinds of microgreens:

  • Pea shoots are delicious raw or make a great substitute for sautéed snap peas in any dish where you want to have that nutty sweet pea flavor.
  • Radish microgreens are spicy, nutritious and delicious. Packed with even more vitamins & antioxidants than broccoli, these are terrific sprinkled on salad, sandwiches and anything else.

This week we are especially excited about the Pea Shoots! These can be eaten raw in salad, lightly sautéed or try them roasted on pizza.

More dry beans in the share this week! In your box, you will either get Cannelini or Alubia Blanca which are two different varieties white beans. Both are creamy and delicious when cooked and they hold their shape well. They can be used interchangeably, pair well with the greens in your share, and were grown by our friends at White Oak Farm.

In the pickup for our SE Portland and Lake Oswego/Luscher Farm shareholders this week:

This week we’re excited about the Winter Sweet winter squash. This is a kabocha type squash that is both delicious and long storing. It is sweet, with a flack texture and nice depth of flavor. Try it roasted or make it into soup.

For the first time this winter you’ll also get some dry beans in the share! There are two different varieties – you’ll either get Jachob’s Cattle or Calypso. The are both delicious and go well with greens.

In fact, many cultures put beans and greens together in creative and delicious combination. One of my favorite recipes is this one from Cathy Whims at Nostrana. It calls for Italian white beans, but I have made it with the different varieties of beans and it is still wonderful.

I have also used Jachob’s Cattle or Calypso as a substitution for black beans in this Rick Bayless Classic. I often appreciate a little heat with cooked beans, so you may also want to cook them with one of the Aji dried peppers in your share. When cooked, the bean varieties in your share will likely plump up larger than the Italian white beans or Mexican black beans. They also make delicious baked beans!

In the pickup for our SE Portland and Lake Oswego/Luscher Farm shareholders this week:

We have a special surprise in the share this week — a bonus box of Umi Organic Noodles with Miso Sesame Sauce. Yum!! Make sure and get them into your fridge and plan to cook them in the next two weeks. We are very excited to partner with Umi because we sincerely believe they are a wonderful foundation for a heap of delicious seasonal vegetables. Combine the noodles with sautéed kale tops & leeks, add thin strips of peeled purple daikon and you have an easy delicious ramen dinner! If you want to get fancy, add crispy fried shallots and radish microgreens on top.

In the pickup for our SE Portland and Lake Oswego/Luscher Farm shareholders this week:

This week in your box we’re giving you what I think may be one of the most under appreciated root veggies – the Watermelon Radish! It is boring greenish white on the outside, but shocking pink on the inside. It is so beautiful and adds a splash of color wherever you use it, and it is also full of many delicious phytochemicals and antioxidants. I like to use it on salad because that is the best way to show off that fabulous color. Shave or grate it onto any salad to add a little pizzazz.

You’ll also find a bunch of Tuscan Kale Tops in the share. I know that technically we’re still deep in winter, but when my favorite kale starts to elongate, head up and form little baby buds, it gives me hope that springtime can’t be far away! And this sunny weather makes it easy to think we’re almost through the winter too! Use these Tuscan Kale Tops just as you would use the kale leaves – they make an amazing raw kale salad or they can be sautéed and added to many different dishes. I’ve recently been using kale (and collards) in pasta, to make quiche, and over polenta.

In the pickup for our SE Portland and Lake Oswego/Luscher Farm shareholders this week:

We’ve been drying our delicious Amish Butter popcorn since the fall and finally – it is ready to POP! You’ll get whole ears in your share today which you can easily take off the cob and then use your favorite popcorn method & recipe (here’s mine!). If you have a grinder, it also makes amazing polenta.

You’ll be getting several items that we’ve spent quite awhile drying and curing this fall. We put them in a paper bag – trying to use less plastic – and hopefully that will keep them from getting wet. This includes: yellow onions, red shallots, the popcorn and dried peppers. The dried peppers are a new variety for us – the Aji family of peppers is native to Bolivia. This variety is called Criollo Sella, and it has beautiful golden fruit. The flavor is rich and citrusy with middling heat. They make a nice hot sauce or can be ground for a flavorful seasoning.
