Apple cake

From Shareholder Veronica, with some changes compared with the original version

Mix and cream:

    3 eggs
    1-1/2 cups turbinado sugar (original recipe calls for 2 cups)
    1 tablespoon vanilla
    1 tablespoon cinnamon (I also made it with same amounts of cardamom or 1/2 tablespoon ground clove instead and it tasted great. At some point I would like to add some fresh ginger to the recipe but I have not tried yet)
    lemon and/or orange zest if you have it
    2/3 cup canola oil (original recipe calls for 1 and 1/2 cups, it is too much for me)

Add to the mix:

    1 cup whole wheat flour
    1 and 1/2 cup regular flour
    1 tablesp baking soda

Mix until blended and add a little milk if too thick

Add:

    6 med to large apples (original recipe calls for 4) cubed
    1 cup chopped walnuts, or pecans or both

Preheat oven at 350°. Add mix to a nonstick rounded ring pan (the ones that have a hole in the center). Bake for 1 hrs and 15 min exactly. Trust me, it will be done!!!!!!!!
